作用機理:風味酶可使水解液形成獨特的風味和減少水解造成的苦味,其原理為通過內切蛋白酶切斷多肽內部的肽鍵,形成短鏈肽,其中一些含有疏水氨基酸,因而成為苦肽,使用外切酶每一次從多肽鏈的末端切斷釋放一個氨基酸,從而把苦肽徹底降解為氨基酸。 蛋白水解液的特性由水解程度及生成的肽的結構所決定,而這又是依賴于蛋白質的本性、所使用的酶的特性、以及水解條件,特別是pH和溫度。
