性狀:淡黃色粉末或黃褐色冷凍干燥粉末。

pH 4.0~5.5,最佳4.8,視底物不同而異。

使用溫度范圍40~60℃,最佳50℃。

影響因子:激活劑有氟化鈉、鎂、氯化鈷、鎘、磷酸鈣和中性鹽類。抑制劑有纖維二糖、葡萄糖和甲基纖維素。
